Yummy Sauteed Veggies

Photobucket

Dh made these to go along with a frittata that he made for dinner last night. Squirrel devoured it! I have never seen her clean the plate so quickly. I wish that I could share pictures of the main dish, but they did not look good.

Baked Tofu

Photobucket

The other day I could not decide what to do with some tofu that I had thawing(I freeze mine tofu). I decided to baked it. After I pressed the tofu, I cut the tofu into steaks. I got 8 'steaks' from the one package of tofu. I then pressed the tofu into a seasoned bread crumb mixture(bread crumbs and your favorite spices). I then baked them on a cookie sheet until they were crispy on the outside but still chewy on the inside. My kids LOVED them. I would of preferred the tofu to be less 'springy'(according to Dragon) but he loved it just like that. I served it along side scalloped potatoes. I had forgotten that I bought them. LOL.

Smothered Tempeh Sandwiches

I made this for lunch last week and it was OOOh so good. Please excuse the Dora plate..it was left over from my dd's birthday.

Smothered Tempeh Sandwich ~Eating Well

Makes 4 servings

ACTIVE TIME: 30 minutes

TOTAL TIME: 30 minutes

EASE OF PREPARATION: Easy

1 8-ounce package tempeh
1 tablespoon canola oil
10 ounces mushrooms, sliced
(I used baby bellas)
1 small red onion, thinly sliced
1/4 teaspoon salt
1 cup dry red wine
4 ounces sliced provolone cheese
8 thin slices whole-wheat bread, toasted

1. Cut tempeh in half widthwise, then slice each piece horizontally to make 4 thin slices total.
2. Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms, onion and salt and cook, stirring often, until golden brown, about 10 minutes. Reduce heat to medium and stir in wine. Add tempeh slices and spoon some of the mushroom mixture over them; cook until the tempeh is heated through and the wine has evaporated, about 5 minutes. Remove from the heat, top with cheese, cover and let stand until the cheese melts, about 1 1/2 minutes.
3. To assemble sandwiches, divide the tempeh among half the toasted bread. Top with the mushroom mixture and the remaining toasted bread. Serve immediately.

Summer Fae's Notes~ I find that there are not enough mushrooms and onions for me. I always use more. Don't forget to boil the tempeh first. My kids even gave this a thumbs up.

Italian Eggplant

I cubed one mammoth zucchini, one eggplant and one orange pepper. I sauteed the zucchini, eggplant, and pepper until everything was cooked. I poured Italian dressing over the veggies for a sauce. I then served it over buttered linguine and topped with Parmesan & shredded mozzarella cheese over. I served it with cheesy garlic bread.

Kids In the Kitchen

Tonight the kids wanted to help with dinner. Dragon helped me make tofu triangles. They were fantastic!! They tasted like chk'n nuggets. I really enjoyed them. I am looking forward to trying them again. Squirrel & Tracker helped me shuck corn and clean some green beans. I just steamed the beans, they ended up tasting bad. :( I think that it has to do with the fact that they were old. Squirrel & dh made some amazing potatoes. I don't know how they made them, but yummy. Dragon helped me prep the tofu for the oven. Dh made some amazing honey mustard dressing to dip the tofu nuggets in. Tracker was too busy throwing water bombs at his brother and sister to come in a help cook the fresh corn. For dessert tonight Dragon & Dh made dark chocolate biscotti.

pics to come...

Lunch & Dinner

Lunch was egg rolls & fruit. The sauce is sweet & sour sauce. I needed to use up my cabbage & spring roll wrappers.
Dinner was AMAZING!! It was caramelized onion, mushroom & spinach pizza. I did put just a little bit of cheese on top. I used less than 2 tablespoons on the entire pizza!! I used the pizza dough recipe found in Vegan Planet. I highly recommend this book. If you don't buy any other cookbook this year buy this one...oh wait you need to buy The Joy of Vegan Baking as well.

Awesome Eggplant!!

Last night I made the best eggplant dish that I have ever tasted. I am not trying to toot my own horn. I don't think that it had anything to do with the cooking, but with the recipe. This picture doesn't do the dish justice.

Here is the original recipe. I have noted the changes that I made at the bottom of the recipe.

Eggplant -- Easy, Good and Tasty

INGREDIENTS
  • 1 tablespoon olive oil
  • 1/3 large eggplant
  • 1 egg
  • 1 tablespoon water
  • 1 cup dry bread crumbs
  • 1 tomato, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Italian-style salad dressing

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet or pizza pan with olive oil.
  2. Slice the eggplant into 8 round slices, each 1/4 to 1/2 inch thick. Trim the skin, maintaining the round shape of the slices. In a small bowl, whip together the egg and water. Place the breadcrumbs in a separate small bowl.
  3. Dip the eggplant slices one at a time into the egg and water mixture, then into the breadcrumbs. One by one, place the coated slices in a single layer on the prepared baking sheet or pizza pan. Top the slices with equal amounts of tomato, Parmesan cheese and Italian-style salad dressing.
  4. Bake in the preheated oven approximately 15 minutes. Change oven setting to broil, and continue cooking 3 to 5 minutes. Check the slices frequently while broiling to avoid burning.

My Notes:
I didn't use the oil. I sprayed the cookie sheet with canola spray. I used the entire eggplant(and that was barely enough to feed my 5..they kept going back for more). I also peeled the eggplant before I sliced it. Instead of eggs & water, I used egg substitute. I added some fresh ground pepper and garlic powder to the eggs as well. I also added dried oregano, basil, and Parmesan cheese to the bread crumbs. I also had to substitute grape tomatoes for the regular tomato. My last substitution was the Italian dressing. I didn't have any plain dressing. I used Kraft Roasted Red Pepper Italian with Parmesan Dressing.

I served it with orzo, green beans and baked tofu bites. It was a family hit. It was very light. This will be a great meal for the summer here.

Personal Cheeseburger Pizza

This was a last minute decision. I couldn't make what I had planned on having due to the eggplant going bad. When I couldn't come up with anything good to eat, I stood staring into the freezer hoping something would scream..cook me. I found 4 veggie burgers that needed to be used. So veggie cheeseburger pizza was born. LOL. I knew that this dish was a family favorite at the pizza place in the past.

Here is what I used for each person...

Ingredients:

pocketless pita
1 veggie burger(cooked), chopped
mustard or ketchup(whatever they prefer)
relish
mexican cheese

Spread the mustard or ketchup on the pocketless pita. Top with a little bit of cheese, the burger, relish and more cheese. Then cook in a 350º oven for about 5 minutes.

This was a HUGE hit. Everyone asked if I could make them again.

Valentine's Day Cooking

DD & I made some Valentine's Day Cupcakes. We just used a white cake mix that I needed to use up. She did most of the work herself. I did learn one thing though. If you don't want red & pink sprinkles ALL over the place never leave a 6yr to decorate the cupcakes. LOL.

For dinner we had heart shaped pasta with veggies. I made a butter sauce(that is what my kids call it). I take minced roasted garlic, basil, oregano, salt, pepper, onion powder and garlic powder(we LOVE garlic here) and mix with melted butter. Then I toss the pasta in it and add parmesan cheese. I put mixed peppers, baby bellas & broccoli on top of the pasta. I served spinach and olive bread on the side. It was delicious! Personally I thought that it was the best sauce that I have ever made.

Calzones

Yummy! Yummy!
I rolled out pillsbury refrigerated pizza crust on a sprayed cookie sheet. I added 'toppings' on half of the crust and then folded the other half over and sealed. I baked it at 400º until it was brown. It was a HUGE hit here. I made 3 different calzones: spicy tofu & cheese, peppers, black olives & cheese, and fully loaded (spicy tofu, broccoli, black olives, peppers, mushrooms, spinach & cheese).

Crock Pot Spinach and Mushroom Lasagna

Crock Pot Spinach and Mushroom Lasagna
I got this from a great yahoo group: Vegetarian_group

This vegetarian lasagna is assembled and cooked in the crock pot--a
perfect solution for people on the go.

1 10 oz frozen box of spinach, thawed and squeezed dry
1 tablespoon olive oil
1 clove garlic
1 small onion
1 8 oz fresh mushroom
2 tablespoon dry red wine
1/2 teaspoon salt
1 8 oz tomato sauce
1 6 oz tomato paste
2 cups spaghetti sauce
12 lasagna noodles, uncooked
1 egg, slightly beaten
1 15 oz ricotta cheese
1/2 cup grated Parmesan cheese
Milk
2 tablespoons parsley flakes
1 dash fresh ground black pepper
2 1/2 cups mozzarella cheese, shredded

Heat olive oil in a medium skillet. Add garlic, mushroom, onion, salt
and wine let simmer for about 10 minutes or until mushrooms and onion
are tender. Next, add tomato paste, tomato sauce, and spaghetti sauce
cooking at least 10 minutes. Meanwhile, mix egg, spinach, ricotta
cheese, Parmesan cheese, parsley, and pepper. Add enough milk to make
ricotta cheese mixture creamy. I add 3 to 4 tbsp milk, (it depends on
whether you like it creamy). Spread a layer of spaghetti sauce over
the bottom of a 4 to 6 qt crock pot. Layer 4 noodles, broken into
pieces to fit, then add a layer of spaghetti sauce mixture followed
by a layer of ricotta cheese mixture, sprinkling half of mozzarella
cheese over ricotta cheese mixture. Repeat layers. Cover and cook on
low setting 4 to 7 hours.

Pan -Seared Black Bean Dumplings

Pan-Seared Black Bean Dumplings

Marilu Henner's kids love these so much she featured them in her bestselling
book, Marilu Henner's Total Health Makeover. If you can't find the chili garlic
paste, you can replace it with 2 teaspoons of Thai chili paste and 1 teaspoon of
chopped garlic. These can also be steamed for a more traditional presentation.

1 cup canned or cooked, drained andmashed black beans
1/2 teaspoon ponzu sauce or fresh lime juice
1/4 cup tahini
2 tablespoons trimmed and thinly sliced scallions
1 tablespoon chili garlic paste
1/2 teaspoon rice wine vinegar
12 tablespoons round wonton wrappers
1 tablespoon tamari soy sauce

In a mixing bowl, blend all the ingredients together except for the wonton
wrappers.
Lay out the wrappers on a flat clean surface. Add approximately 1 teaspoon of
mixture in the center of each skin. Brush a light coating of water around the
edges of the skins and fold over to form a half moon. Repeat with the remaining
wrappers and filling. Seal tightly with your fingers or use a fork to pinch the
ends together. Refrigerate until ready to use.
Preheat the oven to 350F. Spray a nonstick skillet with canola oil spray, set
over medium heat, and cook 6 dumplings at a time. Brown each side 2 to 3
minutes. Finish cooking on a baking sheet in the oven for 5 minutes to warm the
centers.
Makes 4 servings12 dumplings.

"Snake" Sub

Here is a picture of our before trick or treating meal yesterday.

I made a sandwich snake. I used Pilsbury french bread and tinfoil balls to make the snake shape. We also scored the top to make the 'scales'.
After it was baked I cut it like a sub and made a roasted eggplant sub with the works. The kids loved it. It was very good.

Butternut Squash Ravioli Filling

I made this last week for dinner. It was Oooh soo good. They were a hit.All three of my children loved them. I served this with dinner rolls and green beans.Next time I am going to try and toast them.

I found this recipe at CD Kitchen

Ingredients:

1 1/2 pound butternut squash
1 tsp salt
3/4 cup fresh grated Parmesan Cheese, must be fresh(I didn't have fresh)
3 tablespoons butter
1/2 teaspoon nutmeg, scant; go very easy on nutmeg
****sauce*****
3 tablespoons butter
4 fresh sage leaves
1 teaspoon salt

Directions:
Cut the squash in pieces and put about 1 inch water in the bottom of the baking pan. Bake squash at about 400ºF for about 45 minutes, or until tender when pierced with a fork. After it is baked, cool the squash for 5 minutes and then scoop out of the shell and mash thoroughly with other filling ingredients.

Bring an enormous pot of (salted) water to boil. When at a full rolling boil, use a spatula to drop no more than 10 ravioli at a time into the water. They should rise immediately to the surface. Give them enough room so that they don't stick to each other or accidentally get punctured and leak the filling. Cook in batches for 3 minutes only and remove to a warm plate. Meanwhile, melt the butter over very low heat until just bubbly, but do not let it brown. Mince up fresh sage and add with salt. Pour butter sauce over ravioli when you serve.

Serves 6.

*****Chrissy's Notes*****
I didn't use fresh Parmesan cheese because I didn't have any. I used wonton wrappers instead of pasta. I doubled this recipe and I had just enough left that I tried to freeze them. They did great! Next time I make this I will make more of the sauce. It was just too good.

General Taos Fried Tofu

Tonight dh is making General Taos Fried Tofu for those that aren't sick. I am just going to make some rice for those that are. Here is the recipe(I cannot remember where I found it):

ingredients:

1 box firm tofu
egg substitute or a few whipped eggs
3/4 cup corn starch
veg oil for frying
3 chopped green onions
1 Tbsp minced ginger
1 Tbsp minced garlic
2/3 cup vegetable stock
2 Tbsp soy sauce
2-4 Tbsp sugar
red chili pepper flakes to taste
1 Tbsp sherry(optional)
1 Tbsp white vinegar
steamed broccoli

Drain, dry and cut tofu into 1 inch chunks, for best results freeze tofu the night before to get a more chewy consistency, but it isn't necessary. Mix the egg replacer as specified on the box and add additional 3 tbsp of water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cornstarch over tofu and coat completely. Watch out that the tofu doesn't clump at the bottom of the bowl.

Heat oil in pan and fry tofu pieces until golden. Drain oil.

Heat 3 tbsp veg oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn the garlic. Add vegetable stock, soy sauce, sherry(if using), sugar, red pepper and vinegar. Mix 2 Tbsp water with 1 Tbsp cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.

Serve immediately with steamed broccoli over your choice of rice.
