Baked Oatmeal

We woke up to a very chilly morning. I decided to make the kiddos some baked oatmeal. It is always a sign of fall when I start making this dish. I got the recipe from Allrecipes.

Baked Oatmeal II

Cook Time: 40 Minutes Ready In: 50 Minutes
Yields: 4 servings

INGREDIENTS:
3 cups rolled oats
1 cup brown sugar

2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt

1 cup milk
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup dried cranberries
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
3. Bake in preheated oven for 40 minutes.

***Summer Fae's Notes*** I don't use cranberries. I use raisins and chocolate chips.

Coffee Cake & Peaches

Hubby had to work overtime today, so I made a very simple breakfast. I got the Cinnamon Coffee Cake recipe from one of my favorite cookbooks, Vegan Baking. The peaches were just canned peaches that I have had for a while.

Egg-Free Chocolate Banana loaf


I got this from Vegetarian Times March 2008.

Makes 1 loaf, 3 mini loaves, or 12 muffins.

Ingredients:
1-1/2 cups all-purpose flour
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1 cup low-fat buttermilk
3/4 cup mashed banana
1/4 cup canola oil
2 tsp. vanilla extract

Directions.
1. preheat over to 350ยบ. Coat 9x5 loaf pan, 3 6x3 mini loaf pans or 12-cup tin with cooking spray.
2. Whisk together flour, sugar, cocoa, baking soda, and salt in bowl. Whisk together buttermilk, mashed banana, oil, and vanilla in separate bowl. Fold the buttermilk mixture into the flour mixture.
3. Scoop batter into prepared pan(s). Bake large loaf 50 to 60 minutes, miniloaves 35 to 45 minutes, or muffins 18 to 22 minutes, or until toothpick inserted in the center comes out clean. Cool 5 minutes in pan(s). Unmold, and cool. Drizzle with Chocolate Drizzle of desired.

Chocolate Drizzle

Melt 1oz chopped bittersweet chocolate in a double boiler or in microwave at low(20%) power. Drizzle over cooled loaf or muffin.

Bagels-for-Breakfast Spread(Savory)


This is another recipe from my favorite cookbook Vegan Planet.

Ingredients:
4 ounces soft silken tofu, drained
1/3 cup tahini(sesame paste)
1/4 cup miso paste
1 Tbsp fresh lemon juice

In a food processor or blender, combine all the ingredients until well blended. Transfer to a small bowl, cover, and refrigerate until ready to use, up to 3-5 days.

Makes about 1-1/4 cups

Oatmeal Pancakes

Today for breakfast we had Oatmeal Pancakes. They were ok. I must say that I am not a fan of oatmeal.The recipe we used is from The Wildflower Inn. I found the recipe here at 1st Traveler's Choice Internet Cookbook.

Ingredients

2 cups old-fashioned oatmeal
2 cups buttermilk
2 eggs, lightly beaten
1/4 cup butter or margarine, melted and cooled.
1/2 cup all-purpose flour
2 Tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

Combine oats and buttermilk for about 15minutes. Add eggs and butter. Stir well. Add flour, sugar, baking powder, baking soda, and salt. Stir gently. Cook on a medium hot grill. I use a 1/4 cup measuring cup to ladle onto the grill. Serve with maple syrup. Serves 4.

**My notes** I used soymilk and whole wheat flour. My boys and dh had a peanut butter syrup on top. It had a little melted butter, organic smooth peanut butter and a little honey in it. My peanut butter lover loved it.
